• Salt & pepper to taste



🥔 Garlic-Roasted Potatoes (or Pasta Option)
• 2 medium Yukon Gold potatoes, diced (or 8 oz pasta, cooked al dente)
• 1 tbsp olive oil
• 1 clove garlic, minced 🧄
• 1 tsp dried oregano
• 2 tbsp grated Parmesan cheese
• Salt & pepper to taste



🍃 Garnish
• 1 tbsp fresh cilantro, chopped

🔥 Instructions

1. Cook the Chicken
• In a bowl, mix olive oil, lime zest, lime juice, garlic, oregano, salt, and pepper.
• Toss chicken pieces in the mixture and let sit for at least 15 minutes.
• Heat a skillet over medium heat and cook chicken until golden and fully cooked, about 3–4 minutes per side.
• Keep warm.



2. Make the Coconut Lemon Alfredo Sauce
• In the same skillet (or a saucepan), melt butter over medium heat.
• Add garlic and sauté until fragrant.
• Stir in coconut milk, heavy cream, Parmesan cheese, and lime zest.
