PINEAPPLE UPSIDE DOWN CAKE #americanvintage
Pre-heat oven to 350 degrees. Melt 1/4 cup butter in single layer cake pan by placing in heated oven. Remove from oven and add 2/3 cup brown sugar. Dissolve sugar into butter to coat bottom of cake pan.
Place fresh or canned pineapple slices and maraschino cherries on top of brown sugar/butter mixture.
In a separate bowl mix the following ingredients till well blended and fluffy. Start by cutting shortening into dry ingredients and then add liquid ingredients.
1 1/3 cup of flour
1 1/2 tsp baking powder
3/4 cup sugar
dash of nutmeg
1/3 cup butter flavored Crisco
3/4 cup milk
1 egg
1 1/2 tsp vanilla
Pour cake batter over sugar/fruit mixture and bake for 45 - 60 minutes. Immediately after removing from oven turn cake upside down on a plate.
