4 boneless skinless chicken breasts
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika (optional but yummm)

2 tbsp olive oil (for searing)
For the filling:
2 tbsp unsalted butter
3–4 cloves garlic, minced
1 small yellow onion, finely chopped
2 cups mushrooms (button, cremini, or mix), sliced
Salt & pepper to taste
1 tsp fresh thyme (or 1/2 tsp dried)
1/2 tsp chili flakes (optional)
1/2 cup shredded mozzarella
1/4 cup grated parmesan cheese
1 tbsp chopped parsley (for garnish)

Extra mozzarella for melting on top

1. Preheat and prep
Preheat oven to 375°F (190°C). Grease or line a baking dish if finishing in the oven.
