A fresh and tangy salad with creamy goat cheese on toasted bread—perfect for a light French lunch.
Ingredients:
• 100 g goat cheese (chèvre)
• 4 slices of baguette or rustic bread
• 2 cups mixed salad greens (arugula, frisée, etc.)
• 1 tbsp olive oil (plus more for drizzling)
• 1 tsp balsamic vinegar
• Freshly ground black pepper
• Salt to taste
• Chopped chives (optional)
Instructions:
1. Toast the bread slices until golden.
2. Spread goat cheese generously over each toast.
3. Drizzle cheese with olive oil and sprinkle with pepper and chives.
4. Toss salad greens with olive oil, vinegar, salt, and pepper.
