Moist Banana Cake with Toasted Walnuts and Creamy Glaze

Ingredients:

1 1/2 cups mashed ripe bananas (about 3 large bananas)
2 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
1 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
1 cup chopped walnuts (toasted)

For the Glaze:

1 cup powdered sugar
2 tbsp milk (more as needed)
1/2 tsp vanilla extract

Directions:

Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
In a large bowl, cream butter, oil, granulated sugar, and brown sugar until light and fluffy.
Add eggs one at a time, then mix in mashed bananas, vanilla extract, and sour cream until fully combined.
Gradually stir in dry ingredients until just incorporated. Fold in chopped walnuts.
Pour the batter into the prepared baking dish and smooth the top evenly.
Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan on a wire rack.
To make the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cake.
