Roasted Asparagus & Cherry Tomatoes with Burrata
Ingredients:
1 bunch of asparagus
1 cup cherry tomatoes (red & yellow)
1 ball fresh burrata cheese
Olive oil
Salt & black pepper
Fresh basil for garnish
Instructions:
1. Preheat oven to 400°F (200°C).
2. Toss asparagus and cherry tomatoes with olive oil, salt, and pepper.
3. Roast for 15–20 minutes until tender and slightly charred.
4. Place roasted veggies on a plate, add burrata in the center.
5. Drizzle with olive oil, top with basil, and a crack of pepper.
Creamy, juicy, and perfectly roasted!
