Famous Red Lobster Shrimp Scampi 🍤
Ingredients:
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
4 tbsp butter
4 cloves garlic, minced
½ tsp red pepper flakes (optional)
½ cup chicken broth (or white grape juice as a substitute)
1 tbsp fresh lemon juice
½ tsp salt
½ tsp black pepper
½ tsp dried oregano
½ cup Parmesan cheese, grated
2 tbsp fresh parsley, chopped
8 oz linguine or angel hair pasta (optional, if serving with pasta)
Directions:
If serving with pasta, cook it according to package instructions, then drain and set aside.
Heat olive oil in a large pan over medium heat. Add shrimp and cook for 1-2 minutes per side until pink. Remove and set aside.
In the same pan, melt butter and sauté garlic and red pepper flakes for about 30 seconds until fragrant.
Pour in chicken broth, lemon juice, salt, black pepper, and oregano. Let it simmer for 2 minutes.
Return shrimp to the pan and toss to coat in the sauce. Cook for another minute.
Remove from heat, sprinkle with Parmesan cheese and fresh parsley.
Serve immediately over pasta or with crusty bread. Enjoy!
