Rich Vegan Dark Chocolate and Coconut Energy Fuel Bars 🍫🥥⚡️💪
Ingredients:
1 cup / 90g Rolled Oats (use certified gluten-free if needed)
1 cup / 150g Pitted Dates, packed
0.5 cup / 128g Almond Butter or Sunflower Seed Butter
0.5 cup / 40g Unsweetened Shredded Coconut
0.25 cup / 30g Dark Chocolate Chips or Chunks (dairy-free if needed)
1 tbsp Chia Seeds or Ground Flaxseed
1 tsp Vanilla Extract
Pinch of Salt
Directions:
1. Line an 8x8 inch (20x20 cm) square pan with parchment paper, leaving an overhang for easy removal.
2. If your dates are dry, soak them in hot water for 10 minutes, then drain well.
3. In a food processor, combine the rolled oats, drained dates, almond butter (or sunflower seed butter), shredded coconut, chia seeds (or flaxseed), vanilla extract, and salt.
4. Process until the mixture is well combined and starts to stick together, forming a thick dough.
5. Add the dark chocolate chips/chunks and pulse just a few times to incorporate them without breaking them down too much.
6. Transfer the mixture to the prepared pan. Press it down very firmly and evenly using your hands or the back of a spatula. Ensure it's tightly packed.
7. Place the pan in the refrigerator for at least 30 minutes to 1 hour, or in the freezer for 15-20 minutes, until firm.
8. Once firm, use the parchment paper overhang to lift the slab out of the pan.
9. Cut into bars or squares using a sharp knife.
10. Store the bars in an airtight container in the refrigerator for up to 2 weeks.
