Fruit Filling:
4 cups fresh blackberries (or frozen, thawed)
1 cup granulated sugar
2 tablespoons lemon juice
2 tablespoons cornstarch
Topping:
1 cup all-purpose flour
½ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, cold and diced
½ cup milk
Instructions:

Prepare the Fruit Filling: In a large saucepan, combine the blackberries, 1 cup of granulated sugar, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until the mixture thickens and the berries soften, about 10–12 minutes. Remove from heat and pour the mixture into a 9x13 inch baking dish.
Make the Topping: In a mixing bowl, whisk together the flour, ½ cup of granulated sugar, baking powder, and salt. Add the cold, diced butter and use a pastry cutter or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs. Gradually stir in the milk until the dough comes together.
Assemble the Cobbler: Drop spoonfuls of the topping over the fruit mixture, spacing them evenly to cover the surface. Do not press down on the topping.
Bake: Place the dish in a preheated oven at 375°F (190°C) and bake for 35–40 minutes, or until the topping is golden brown and the fruit filling is bubbling around the edges.
Serve: Remove the cobbler from the oven and let it cool slightly. Serve warm, optionally topped with whipped cream or vanilla ice cream.
