Creamy Garlic Chicken with Mashed Potatoes

Ingredients:

1.5 lbs boneless, skinless chicken breasts
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 tablespoons olive oil
1/2 cup butter
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/4 cup grated Parmesan cheese
2 pounds russet potatoes, peeled and quartered
1/2 cup milk
1/4 cup butter
Salt and pepper to taste
Fresh parsley, chopped (for garnish, optional)

Instructions:

1. Season the chicken breasts: In a shallow dish, combine flour, salt, pepper, paprika, garlic powder, and onion powder. Dredge each chicken breast in the flour mixture, ensuring it's fully coated.

2. Brown the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

3. Make the garlic cream sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic.

4. Add liquids and simmer: Pour in the chicken broth and bring to a simmer. Reduce heat to low and let the sauce simmer for about 5 minutes, allowing it to slightly reduce.

5. Stir in cream and cheese: Stir in the heavy cream and Parmesan cheese. Continue to simmer for another 2-3 minutes, or until the sauce has thickened slightly. Taste and adjust seasoning with salt and pepper as needed.

6. Return chicken to the sauce: Add the cooked chicken breasts back to the skillet, coating them in the creamy garlic sauce. Let the chicken simmer in the sauce for a few more minutes to allow it to absorb the flavors.

7. Prepare the mashed potatoes: While the chicken is simmering, cook the potatoes in a large pot of boiling salted water until tender, about 15-20 minutes. Drain the potatoes well.

8. Mash the potatoes: Return the potatoes to the pot and mash them with a potato masher or electric mixer. Add the milk and butter, and mash until smooth and creamy. Season with salt and pepper to taste.

9. Serve: Serve the Creamy Garlic Chicken over a generous portion of mashed potatoes. Garnish with fresh parsley, if desired.
