Classic Potato Salad with a Special Twist
Ingredients:
4 medium potatoes, peeled and diced
1/2 cup mayonnaise
2 tbsp Dijon mustard
2 tbsp apple cider vinegar
1/4 cup finely chopped red onion
1/4 cup chopped celery
Salt and pepper to taste
1 tbsp fresh dill (optional for an extra twist)
Directions:
Boil the diced potatoes in salted water for 10-12 minutes, until tender. Drain and let cool.
In a separate bowl, mix mayonnaise, Dijon mustard, and apple cider vinegar.
Stir in the chopped red onion, celery, and fresh dill (if using).
Gently fold in the cooled potatoes until everything is well combined.
Season with salt and pepper to taste.
Chill for 30 minutes before serving for enhanced flavor.
