Salmon Niçoise salad for a high protein lunch. I used canned salmon with skin and bones for the salmon over a bed of lettuce with garlicky potatoes, green beans, cherry tomatoes, Kalamata olives, red onion and a hard boiled egg topped with lemon honey mustard dressing made with grainy mustard. 1/4 cup extra virgin olive oil.
- juice of a lemon.
2 tablespoons honey.
- 1 teaspoon whole grain mustard.
- 1 teaspoon minced garlic.
