Prepare Your Workspace: Grease candy molds lightly or lay out parchment paper on a flat surface if making free-form lollipops. Have lollipop sticks ready nearby for quick assembly.
Make the Syrup Base: In a medium saucepan, combine sugar, corn syrup, and water over medium heat. Stir continuously until the sugar dissolves completely, ensuring no grains remain.
Reach the Perfect Temperature: Stop stirring and let the mixture heat undisturbed until it reaches 300°F (hard crack stage). This step takes around 10–15 minutes, so be patient and monitor closely with a candy thermometer.
Add Flavor and Fizz: Once heated, remove the pan from the stove immediately. Swiftly stir in the Kool-Aid powder and baking soda. The mixture will foam up briefly—this is what creates the fun fizz sensation. Work quickly to avoid hardening before molding.
Shape Into Lollipops: Pour the hot syrup into prepared molds or drop rounded spoonfuls onto parchment paper. Insert lollipop sticks gently into the center of each circle, twisting slightly to ensure they adhere well.
Let Them Set: Allow the lollipops to cool and harden at room temperature for about 15–20 minutes. Avoid touching them during this time to prevent breakage.
