1 1/2 cups dry white wine (like Sauvignon Blanc)

4 cups seafood or fish stock (or chicken broth)

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional, for heat)

Salt and black pepper, to taste

1 lb clams, scrubbed

1 lb shrimp, peeled and deveined

1 lb white fish, cut into chunks (like cod or halibut)

1/2 lb crab meat (optional but delicious!)

Fresh parsley and chives, chopped (for garnish)

Toasted crusty bread, for serving

📖 Instructions:
1. Prepare the Base:

Heat olive oil in a large pot or Dutch oven over medium heat.

Add onions, garlic, fennel, and red bell pepper. Cook until softened (about 8 minutes).

2. Add Tomatoes and Wine:

Stir in crushed tomatoes, tomato paste, white wine, and stock.

Add oregano, thyme, red pepper flakes (if using), salt, and pepper.

Bring to a boil, then reduce heat and simmer for 20 minutes, allowing flavors to meld.

3. Add Seafood:

Add clams first, cover, and cook until they begin to open (about 5 minutes).

Add shrimp, white fish, and crab meat (if using).

Simmer for another 5-7 minutes, or until all seafood is cooked through and clams are fully open. (Discard any clams that do not open).
