Tangy Lemon and Sweet Strawberry Cheesecake Delight

Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 tsp vanilla extract
1 cup heavy cream
1/2 cup powdered sugar
1/2 cup lemon juice
1/2 cup fresh strawberries, chopped
1 tablespoon lemon zest
Directions:
Preheat your oven to 325°F (160°C).
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to create a crust. Bake for 10 minutes and set aside to cool.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add vanilla extract, lemon juice, powdered sugar, and lemon zest, and continue to beat until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Pour the cream cheese mixture over the cooled graham cracker crust and smooth the top. Refrigerate for at least 4 hours or overnight for best results.
Before serving, top the cheesecake with chopped fresh strawberries and a drizzle of strawberry syrup or compote if desired.
