Club Sandwich Pasta Salad

Ingredients:

12 oz pasta (rotini, bowtie, or penne)

1 1/2 cups cooked chicken breast, diced

1 cup cooked bacon, crumbled

1 cup cherry tomatoes, halved

1 cup shredded lettuce

1 cup shredded cheddar cheese

1/2 cup diced red onion

For the Dressing:

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon sugar (or honey)

1/2 teaspoon garlic powder

Salt and pepper, to taste

Directions:

Cook the Pasta:

Cook the pasta according to the package instructions until al dente.

Drain and rinse with cold water to cool down the pasta.

Transfer the cooled pasta to a large bowl.

Prepare the Ingredients:

Dice the cooked chicken breast.

Crumble the cooked bacon.

Halve the cherry tomatoes.

Shred the lettuce.

Shred the cheddar cheese.

Dice the red onion.

Make the Dressing:

In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar (or honey), garlic powder, salt, and pepper until smooth.

Assemble the Salad:

Add the diced chicken, crumbled bacon, halved cherry tomatoes, shredded lettuce, shredded cheddar cheese, and diced red onion to the bowl with the pasta.

Pour the dressing over the salad and toss gently to combine.

Chill and Serve:

Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld.

Serve chilled.
