Blueberry Pistachio Spring Salad
**Ingredients:
- 1 small avocado, sliced
- 1 cup fresh blueberries
- 6 oz butter lettuce
- 5 oz spring mix greens
- 1/3 cup pomegranate arils
- 1/2 medium red onion, thinly sliced
- 1 watermelon radish, thinly sliced
- 2 oz feta cheese, crumbled
- 1/4 cup candied pecans (or pistachios for variation)
- Creamy pomegranate dressing (to taste)
**Directions:
1. In a large salad bowl, layer the butter lettuce and spring greens.
2. Arrange blueberries, avocado slices, pomegranate arils, red onion, and watermelon radish on top.
3. Sprinkle with candied pecans and crumbled feta.
4. Drizzle with creamy pomegranate dressing just before serving.
5. Toss gently to combine and serve immediately.
