CREAMY CAJUN GARLIC CHICKEN TORTELLINI WITH PARMESAN DRIZZLE
Ingredients:
2 boneless, skinless chicken breasts, sliced into strips
12 oz cheese tortellini
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp smoked paprika
1/2 tsp garlic powder
4 cloves garlic, minced
1 tsp dried basil
1/2 tsp crushed red pepper flakes (optional for extra heat)
Salt and black pepper to taste
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 tbsp butter
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the Tortellini:
Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions until al dente. Drain and set aside.
2. Cook the Chicken:
In a bowl, toss chicken strips with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for 6–7 minutes, turning occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
3. Make the Creamy Cajun Garlic Sauce:
In the same skillet, reduce heat to medium and add minced garlic. Cook for 1 minute until fragrant.
Pour in chicken broth and bring to a simmer for 2 minutes.
Stir in heavy cream, Parmesan cheese, mozzarella cheese, and butter. Let the sauce simmer for 3–4 minutes, stirring constantly, until it thickens and becomes creamy.
4. Combine Tortellini and Chicken:
Add the cooked tortellini to the skillet and toss it in the creamy Cajun garlic sauce. Return the cooked chicken to the skillet and stir everything to combine. Let it simmer for 2 minutes to allow the flavors to meld.
5. Garnish and Serve:
Drizzle extra Parmesan over the top and garnish with fresh parsley. Serve immediately and enjoy the creamy, garlicky, and spicy Cajun twist on a classic dish!
