Southern Fried Okra
~~Ingredients~~
1 lb. fresh okra, chopped
Salt & Pepper to taste
1 Cup buttermilk
1/2 cup plain stoneground cornmeal
1/2 cup self rising flour
1/2 teaspoon onion powder
1 tablespoon corn starch
Lard to fry, if you don’t have lard, use Crisco shortening or oil
~~Instructions ~~
Wash, dry and slice your okra. Season it with salt and pepper to taste. Pour the buttermilk over the okra. and set it aside.
In a ziploc bag, mix together the cornmeal, flour, onion powder and corn starch, shake it to mix thoroughly. Dip your okra out of the buttermilk and place it in the ziploc bag and shale to coat. Make sure that the okra is well coated with cornmeal mixture. How you coat it is how it will come out.
In a cast iron skillet over medium high heat or a deep fryer, heat Lard til it is sizzling. Drop okra in batches, do not overcrowd. Cook til golden brown, it won’t take but about 4 or 5 minutes. Take the okra up on paper towels to drain excess oil and sprinkle with a salt to taste while still warm.
**Note
If you don’t have Lard or Crisco shortening, you can opt to use vegetable oil instead.
Don’t know why, it just taste better Fried in Lard or shortening, maybe it is because that is how my grandmother did it.❤️ Some things are better with shortening and Lard.
