Easy Hobo Casserole Recipe
Ingredients:
1 lb ground beef
1 small onion, chopped
4 medium potatoes, thinly sliced (or use frozen hash browns in a pinch)
1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
1/2 cup milk
1 ½ cups shredded cheddar cheese
Salt and pepper to taste
Optional: garlic powder, paprika, or Worcestershire sauce for extra flavor
Instructions:
Preheat oven to 375°F (190°C).
Cook ground beef in a skillet over medium heat with chopped onion until browned. Drain any excess fat.
Layer in a greased 9x13 baking dish:
First layer: half the sliced potatoes
Second layer: half the beef/onion mixture
Repeat layers
Mix soup and milk in a bowl until combined. Pour evenly over the casserole.
Season with salt, pepper, and any additional spices you like.
Cover with foil and bake for 45 minutes.
Uncover, top with cheese, and bake an additional 10–15 minutes until cheese is melted and bubbly and potatoes are tender.
Let rest 5–10 minutes before serving.
