Instant Pot Pot Roast
Ingredients
3 to 4 pounds beef chuck roast
1 tablespoon olive oil
1 onion, chopped
4 cloves garlic, minced
4 carrots, chopped
4 potatoes, chopped
2 cups beef broth
2 tablespoons Worcestershire sauce
Salt and pepper to taste
Fresh herbs (like rosemary or thyme) for garnish
Directions
1. Set your Instant Pot to the 'Sauté' mode and warm up the olive oil.
2. Season the beef chuck roast generously with salt and pepper. Brown it in the pot on all sides to lock in that flavor.
3. Remove the roast and set it aside for a bit.
4. Toss in the chopped onion and minced garlic, then sauté until the kitchen smells amazing and everything is fragrant.
5. Add in the chopped carrots and potatoes. Nestle the browned roast right on top of the veggies.
6. Pour in the beef broth and Worcestershire sauce, making sure everything gets a good soak.
7. Close the lid, seal the valve, and set the Instant Pot to 'Manual' for 60 minutes.
8. When the timer goes off, let the pressure release naturally for 10 minutes, then carefully do a quick release for any remaining pressure.
9. Take out the roast, slice it up, and serve alongside those tender veggies.
10. Finish everything off with a sprinkle of fresh herbs for a bright, flavorful touch.
