Ingredients

For the crust (fathead dough):

1 ½ cups shredded mozzarella cheese

2 oz cream cheese

1 large egg

1 cup almond flour

½ tsp baking powder

½ tsp garlic powder

For the taco topping:

1 lb ground beef (or turkey)

2 tbsp taco seasoning (sugar-free, or homemade: chili powder, cumin, paprika, garlic powder, salt, pepper)

½ cup sugar-free salsa or low-carb tomato sauce

For the toppings:

1 cup shredded cheddar (or Mexican blend cheese)

½ cup shredded mozzarella

Diced tomato

Diced onion

Pickled jalapeños

Sour cream, guacamole, or fresh cilantro (optional garnish)

Instructions
Step 1: Make the crust

Preheat oven to 400°F (200°C).

In a microwave-safe bowl, melt mozzarella and cream cheese together (about 1–2 minutes, stirring halfway).

Stir in almond flour, baking powder, garlic powder, and egg until dough forms.

Roll out between parchment paper into a circle about ¼-inch thick.

Bake for 8–10 minutes until lightly golden.

Step 2: Cook the taco meat

Brown ground beef in a skillet.

Drain excess grease, add taco seasoning and a splash of water, simmer until thickened.

Step 3: Assemble the pizza

Spread salsa or tomato sauce over baked crust.

Add taco meat evenly across.

Sprinkle cheddar and mozzarella cheese on top.

Step 4: Bake & top

Return to oven for 8–10 minutes until cheese is melted and bubbly.

Top with diced tomato, onion, jalapeños, and optional sour cream or guacamole.
