🥦 Creamy Broccoli & Potato Soup
Ingredients:
1 tbsp butter or oil
1/2 onion, chopped
1 garlic clove, minced
2 cups potatoes, diced
1 cup carrots, diced
2 cups broccoli florets
3 cups vegetable broth
1 cup milk or cream
1 cup shredded cheese (optional)
Salt, pepper, herbs to taste
Instructions:
Sauté onion & garlic in butter until soft.
Add potatoes, carrots, and broth. Simmer 10–12 mins.
Add broccoli, cook until tender.
Stir in milk/cream and cheese. Let it melt.
Season and serve hot.
