Brownie Sundae Cheesecake
Ingredients:
- Brownie Chunks:
- 1 box brownie mix (plus ingredients called for on box - usually water, eggs, and oil)
- Chocolate Cookie Crust:
- 1½ cups crushed Nilla Wafers (about 45-50 cookies)
- 6 tablespoons powdered sugar
- 6 tablespoons cocoa powder
- ½ cup unsalted butter, melted
- Creamy Cheesecake Filling:
- 32 ounces cream cheese, softened to room temperature
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- ½ cup hot fudge sauce for swirling
Directions:
1. Preheat the oven to 350°F (175°C). Prepare the brownie mix according to the package instructions. Pour the batter into a greased baking dish and bake as directed. Once baked, let cool completely and cut into chunks.
2. In a medium bowl, combine crushed Nilla Wafers, powdered sugar, cocoa powder, and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.
3. In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and continue beating until well combined.
4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Pour half of the cheesecake batter over the prepared crust. Spoon half of the hot fudge sauce in dollops over the batter and gently swirl with a knife.
6. Scatter half of the brownie chunks over the cheesecake layer, then pour the remaining cheesecake batter on top.
7. Repeat the hot fudge sauce swirling and top with the remaining brownie chunks.
8. Bake for 50-60 minutes, or until the center is almost set but still slightly jiggly.
9. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
