Ingredients

For the Donuts:

1 ½ cups almond flour

¼ cup coconut flour

2 tsp baking powder

¼ tsp salt

½ cup powdered erythritol (or monk fruit sweetener)

3 large eggs

½ cup sour cream (or Greek yogurt, unsweetened)

¼ cup unsweetened almond milk

1 tsp vanilla extract

2 tbsp melted butter or coconut oil

For Coating:

¼ cup powdered erythritol + 1 tsp cinnamon

For the Filling: (choose one or mix & match)

Sugar-free custard (egg yolks + cream + erythritol + vanilla)

Sugar-free whipped cream (heavy cream + erythritol + vanilla)

Sugar-free fruit jam (made with chia seeds + berries + sweetener)

Instructions

Preheat Oven:
Heat oven to 350°F (175°C). Grease a donut pan (or muffin tin if making round donuts).

Mix Batter:
In one bowl, whisk almond flour, coconut flour, baking powder, salt, and erythritol.
In another, whisk eggs, sour cream, almond milk, vanilla, and melted butter.
Combine wet and dry ingredients until smooth.

Bake Donuts:
Pour batter into molds. Bake for 15–20 minutes until golden and firm. Let cool completely.

Coating:
Brush donuts lightly with melted butter. Roll in cinnamon-erythritol mixture to coat.

Filling:
Slice each donut halfway (like a pocket). Use a piping bag to fill with sugar-free custard, whipped cream, or jam.

Serve:
Enjoy fresh or refrigerate for up to 3 days.
