Southern Black-Eyed Peas ❤️ Recipe Requested

1 pound dried black-eyed peas
1 large sweet onion, chopped
fresh black pepper
Seasoning meat, ham, a smoked ham hock, streak-o-lean, bacon or fatback
Salt to taste

Pick over and make sure there are no bad peas or rocks, Yes, occasionally I have found rocks and rinse the dried peas. I don’t soak my dried peas, because I don’t feel like it is necessary, I have done it and it does absolutely nothing for the peas as far as I am concerned.
In a large heavy pot, add the peas, onions and the seasoning meat of choice and cover them with water, about 6 inches above the peas, the peas are going to swell. Bring the peas to a rolling boil, once they start boiling, skim off any impurity’s that comes to the top. Impurities are in the form of foam, skim all the foam. Once you have skimmed off the foam, add your black pepper, cover your pot and lower your heat to a simmer. Keep a glass of water beside your pot of peas in case you have to add some additional water. You don’t want to add it unless you have to. The peas have to have water so they won’t scorch if the water cooks out. Set the timer for 15 minutes, then increase your heat back to high and bring your peas to a rolling boil again and let them boil for 5 minutes, make sure they have water, but no more than an inch above the peas once they have swelled. After 5 minutes, lower your heat back to simmer and let simmer another 15 minutes. After the 15 minutes, taste your peas to see if they are tender, you don’t want mushy peas. It only takes about 45 minutes to cook black eye peas not hours. If you need to cook them any longer, check them every five minutes Once the peas are the desired doneness, then you salt the peas to taste.
Note. Stir very little during cooking to avoid breaking the skins.
You don’t salt the peas til the end because you are using a seasoning meat that has salt in it already.
