Mediterranean Chicken & Walnut Salad Bowl
Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breasts
2 tbsp olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 tsp dried oregano
Salt & black pepper, to taste
For the Salad:
4 cups mixed greens (spinach, arugula, or spring mix)
1/2 cup walnuts, toasted
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/3 cup crumbled feta cheese
For the Dressing:
3 tbsp olive oil
1 tbsp red wine vinegar
1 tsp Dijon mustard
1 tsp honey
Salt & black pepper, to taste
Directions:
Marinate chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.
Grill or pan-sear chicken over medium heat for 6–8 minutes per side until cooked through. Slice thinly.
In a large bowl, combine mixed greens, walnuts, cherry tomatoes, cucumber, red onion, and feta.
Whisk together dressing ingredients and drizzle over salad. Toss gently.
Top salad with sliced chicken and serve immediately.
