Greek Yogurt Chia Seed Cookies
Ingredients
* ½ cup plain Greek yogurt
* 1 large egg
* ¼ cup maple syrup or honey
* 1 tsp vanilla extract
* ½ cup rolled oats
* 2 tbsp coconut flour (or almond flour)
* 1½ tbsp chia seeds
* ½ tsp baking powder
* Pinch of salt
* ¼ cup mini chocolate chips or dried fruit (optional)
Instructions
1- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2- In a medium bowl, whisk together Greek yogurt, egg, maple syrup, and vanilla until smooth.
3- Stir in oats, coconut flour, chia seeds, baking powder, and salt. Let the dough sit for 5 minutes to allow the chia seeds and coconut flour to absorb moisture.
4- Fold in chocolate chips or dried fruit if using.
5- Drop spoonfuls of dough onto the baking sheet and gently flatten.
6- Bake for 10–12 minutes, or until edges are golden.
7- Let cookies cool on the baking sheet before serving—they will firm up as they cool.
