Caramelized Sweet Potatoes with Maple, Feta & Crunchy Walnuts
Ingredients:
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/3 cup walnuts, roughly chopped and toasted
- 2 tablespoons fresh parsley, chopped (optional)
Directions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated.
3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
5. Remove from oven and transfer to a serving dish.
6. Sprinkle crumbled feta cheese and toasted walnuts over the warm sweet potatoes.
7. Garnish with fresh parsley if desired, and serve immediately.
