Crock Pot Potato Broccoli Cheddar Soup
Ingredients:
- 4 cups diced potatoes
- 2 cups chopped broccoli
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
Instructions:
1. In a crock pot, combine potatoes, broccoli, onion, garlic, and broth. Cook on low for 6-8 hours or on high for 3-4 hours.
2. Using an immersion blender, blend the soup until smooth.
3. Stir in cheddar cheese and milk until melted and creamy.
4. Season with salt and pepper, and serve hot.
