Triple Chocolate Mousse Cake
Ingredients:
For the Oreo Crust:
2 cups Oreo cookies, finely crushed
1/4 cup unsalted butter, melted
For the Chocolate Cake Layer:
1 cup all-purpose flour
1/2 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1/2 cup milk
1/4 cup vegetable oil
1 tsp vanilla extract
1/2 cup hot coffee
For the Chocolate Mousse Layers:
1 cup semi-sweet chocolate, melted
1 cup milk chocolate, melted
2 cups heavy whipping cream, cold
1/4 cup powdered sugar (optional)
For the Chocolate Ganache Topping:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
Directions:
Preheat oven to 350°F (175°C) and grease an 8-inch springform pan. Press the crushed Oreo mixture with melted butter into the pan to form the crust. Bake for 10 minutes and let cool.
For the cake layer, whisk together flour, cocoa powder, baking powder, baking soda, and salt in a bowl. In another bowl, beat sugars, eggs, milk, oil, and vanilla. Gradually add dry ingredients, then stir in hot coffee. Pour over the crust and bake for 25-30 minutes. Cool completely.
Whip cold cream until soft peaks form, dividing into two bowls. Fold melted semi-sweet chocolate into one bowl and milk chocolate into the other, forming two mousses. Spread semi-sweet mousse over the cake layer, refrigerate for 30 minutes, then layer milk chocolate mousse on top. Chill for 2 hours.
For the ganache, heat cream until steaming and pour over chocolate chips. Let sit for 5 minutes, then stir until smooth. Spread ganache over the mousse layers and chill for another hour before serving.
