Detox Cabbage Soup

Ingredients:
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
1 small green cabbage, chopped
1 zucchini, diced
1 bell pepper, diced (red or yellow)
1 (14.5-ounce) can diced tomatoes (no salt added)
6 cups vegetable broth (or water)
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon turmeric (optional, for anti-inflammatory benefits)
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon dried thyme
1 tablespoon apple cider vinegar (for digestion support)
2 cups chopped spinach or kale (added at the end)
Juice of ½ lemon (for brightness)
Fresh parsley, for garnish
Directions:
Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
Add the Vegetables & Broth: Stir in cabbage, zucchini, bell pepper, diced tomatoes, and vegetable broth. Add salt, black pepper, turmeric, paprika, oregano, and thyme. Bring to a boil.
Simmer: Reduce heat and let simmer for 25-30 minutes, until vegetables are tender.
Finish the Soup: Stir in apple cider vinegar, spinach or kale, and lemon juice. Cook for 2 more minutes.
Serve & Enjoy: Ladle into bowls and garnish with fresh parsley. Serve warm!
