Succulent Filet Mignon Drizzled with Brandy Peppercorn Sauce

Ingredients
2 filet mignon steaks (about 200-250 g each)
Salt and pepper, to taste
2 tablespoons olive oil
1 tablespoon butter
For the Brandy Peppercorn Sauce:
1/4 cup brandy
1/2 cup heavy cream
2 tablespoons green peppercorns (drained)
1 tablespoon Dijon mustard
Salt to taste
Instructions
Prepare the Steaks:
Season the filet mignon steaks generously with salt and pepper.
Cook the Steaks:
In a skillet, heat olive oil over medium-high heat. Add the steaks and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Add butter to the skillet in the last minute for extra flavor. Remove the steaks and let them rest.
Make the Sauce:
In the same skillet, carefully add the brandy and let it reduce for about 1-2 minutes. Add the heavy cream, green peppercorns, and Dijon mustard. Stir and simmer for about 3-4 minutes until the sauce thickens. Season with salt to taste.
Serve:
Slice the filet mignon and drizzle the brandy peppercorn sauce over the top. Enjoy with your favorite sides!
