Avocado Chicken Penne with Roasted Peppers
Creamy Avocado Chicken Penne with Fire-Roasted Peppers
Ingredients:
2 ripe avocados, peeled and pitted
2 cups cooked penne pasta
2 chicken breasts, grilled and sliced
1 cup roasted red and yellow peppers, sliced
2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
1/2 teaspoon paprika
Salt and pepper to taste
1 tablespoon lemon juice
Directions:
Cook the penne pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the sliced grilled chicken and roasted peppers to the skillet. Season with paprika, salt, and pepper. Cook for 2-3 minutes until heated through.
In a bowl, mash the avocados with lemon juice, a pinch of salt, and a bit of pepper until creamy.
Toss the cooked pasta into the skillet, mixing well with the chicken and peppers.
Remove from heat and fold in the avocado cream, gently stirring until everything is well coated.
Sprinkle with Parmesan cheese and fresh basil before serving.
