The BEST Ice Cream Cookie Sandwiches 🍦🍪
Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups chocolate chips
- 1 quart ice cream (your choice of flavor)
Directions:
1. Preheat your oven to 350°F (175°C).
2. In a bowl, mix flour, baking soda, and salt; set aside.
3. In another bowl, cream together butter, brown sugar, and granulated sugar until smooth.
4. Beat in the vanilla extract and eggs.
5. Gradually blend in the dry ingredients.
6. Stir in chocolate chips.
7. Drop rounded tablespoons of dough onto baking sheets.
8. Bake for 10-12 minutes or until edges are golden.
9. Let cool on the baking sheet for a few minutes, then transfer to wire racks to cool completely.
10. Once cookies are cool, take one cookie, add a scoop of ice cream, and top with another cookie.
11. Repeat with remaining cookies and ice cream.
12. Freeze sandwiches for about 30 minutes before serving.
