Simple Chinese Mango Pudding That's Smooth and Delicious! 🍮🥭
ingredients:
2 ripe mangoes, peeled and pureed (about 2 cups or 470g puree)
1/2 cup (100g) sugar (adjust to sweetness of mangoes)
1 and 1/2 cups (350ml) plant-based milk (like almond or soy)
1/2 cup (120ml) water
3 tablespoons agar-agar powder (or 4-5 agar-agar strips, soaked and squeezed)
Optional: Cubed fresh mango and dairy-free condensed milk for serving
directions:
In a saucepan, combine the plant-based milk, water, sugar, and agar-agar powder (or soaked strips).
Heat the mixture over medium heat, stirring constantly, until the sugar is dissolved and the agar-agar is completely dissolved. This will take a few minutes after it starts to simmer, ensure no particles remain if using powder or fully dissolved strips.
Remove from heat and stir in the mango puree until well combined and smooth.
Pour the mixture into individual molds or a single large mold (like a loaf pan or small bowl) that has been lightly rinsed with cold water.
Let the pudding cool at room temperature for about 30 minutes, then cover and refrigerate for at least 2-3 hours, or until set and firm.
To serve, carefully unmold the pudding by dipping the mold briefly in warm water (if needed) and inverting onto a serving plate. If using individual glasses, serve directly.
Garnish with fresh mango cubes and drizzle with dairy-free condensed milk if desired.
