Creamy Garlic Chicken & Penne
Ingredients:
12 oz penne pasta
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and black pepper, to taste
4 cloves garlic, minced
1 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes (optional)
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup baby spinach (optional)
2 tablespoons chopped parsley (for garnish)
Directions:
Cook penne pasta according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then add to skillet. Cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
In the same skillet, add garlic and sauté for 30 seconds until fragrant. Add Italian seasoning and red pepper flakes, stir briefly.
Pour in chicken broth and heavy cream. Bring to a simmer and cook for 5 minutes until slightly thickened.
Stir in Parmesan cheese until melted and the sauce is smooth.
Return chicken to the skillet and stir to coat in the sauce. Add cooked penne and toss to combine.
Stir in spinach, if using, and cook until wilted.
Garnish with chopped parsley and serve hot.
