Sweet Chili Salmon with Garlic Penne
Glazed Sweet Chili Salmon over Garlic Butter Penne
Ingredients:
4 salmon fillets (skinless, about 6 oz each)
1/3 cup sweet chili sauce
2 tablespoons soy sauce (low sodium)
2 tablespoons honey
1 tablespoon lime juice
1 tablespoon olive oil
8 oz penne pasta
3 tablespoons unsalted butter
4 garlic cloves, minced
2 tablespoons chopped parsley
Salt and black pepper to taste
Lime wedges, for serving
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, mix sweet chili sauce, soy sauce, honey, lime juice, and a pinch of pepper. Place salmon fillets on the prepared baking sheet and brush generously with the mixture. Let marinate while the oven heats.
Bake salmon for 12–15 minutes or until cooked through and flaky, basting halfway through with more sauce.
Meanwhile, cook penne pasta according to package instructions. Drain and set aside.
In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.
Add cooked pasta to the skillet, toss well to coat in garlic butter, season with salt and pepper, and stir in chopped parsley.
Serve the salmon over a bed of garlic butter penne. Garnish with lime wedges and a drizzle of remaining sweet chili sauce if desired.
