Flavorful Herbed Tilapia over Creamy Broccoli Fettuccine

Ingredients:

4 tilapia fillets

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried parsley

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

12 oz (340g) fettuccine pasta

2 cups broccoli florets

2 tablespoons butter

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

1/4 cup pasta water (reserved)

2 tablespoons fresh parsley, chopped

Directions:

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a small bowl, mix olive oil, basil, parsley, garlic powder, onion powder, paprika, salt, and pepper.

Brush the tilapia fillets with the herb mixture and place them on the prepared baking sheet.

Bake for 12-15 minutes, or until the fish flakes easily with a fork.

Meanwhile, bring a large pot of salted water to a boil. Cook the fettuccine according to package directions, adding broccoli florets during the last 3 minutes of cooking.

Drain pasta and broccoli, reserving 1/4 cup of the pasta water.

In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.

Stir in heavy cream and Parmesan cheese, cooking until slightly thickened. Add reserved pasta water if needed for consistency.

Toss the cooked fettuccine and broccoli in the sauce.

Serve the herbed tilapia on top of the creamy broccoli fettuccine, garnished with fresh parsley.
