Ingredients:
Protein:
1 sunny-side-up egg 🥚
Veggies:
1/2 avocado, sliced 🥑
1/2 cup cherry tomatoes, halved 🍅
1/2 cup cooked corn kernels 🌽
1/2 cup arugula or baby spinach 🥬
Seasoning:
Salt and black pepper to taste 🧂
1 tsp sesame seeds (optional) 🌱
1 tsp olive oil 🫒
Fresh parsley, chopped (for garnish) 🌿
Instructions:
Prepare the Egg:
Heat a non-stick skillet over medium heat with olive oil.
Cook the egg sunny-side-up until the whites are set but the yolk remains runny.
Prepare the Veggies:
Slice the avocado and halve the cherry tomatoes.
If using canned corn, rinse and drain it. Heat lightly if desired.
Assemble the Bowl:
Arrange arugula, avocado slices, cherry tomatoes, and corn in sections within a bowl.
Place the sunny-side-up egg in the center.
Season and Garnish:
Sprinkle sesame seeds, salt, pepper, and fresh parsley over the bowl.
