Cajun Alfredo Tortellini with Seared Chicken and Melted Mozzarella
Ingredients:
1.5 lbs boneless, skinless chicken breasts
2 tbsp olive oil, divided
2 tsp Cajun seasoning
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 (20 oz) package cheese tortellini
4 tbsp butter
2 cloves garlic, minced
1.5 cups heavy cream
1 cup grated Parmesan cheese
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
Directions:
1.Cut chicken breasts into 1-inch thick pieces. In a bowl, toss chicken with 1 tbsp olive oil, Cajun seasoning, garlic powder, salt, and pepper.
2.Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-7 minutes per side, or until cooked through and golden brown. Remove chicken from skillet and set aside.
3.Cook tortellini according to package directions. Drain and set aside.
4.In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
5.Pour in heavy cream and bring to a simmer. Reduce heat to low and stir in Parmesan cheese and cream cheese until smooth and melted.
6.Add cooked tortellini to the sauce and toss to coat.
7.Top with shredded mozzarella cheese and cover the skillet. Let it sit for 1-2 minutes, or until the mozzarella is melted and gooey.
8.Slice the seared chicken and arrange it over the creamy tortellini. Serve immediately.
