Homemade Saltwater Taffy

Ingredients:

- 2 cups granulated sugar
- 2 tablespoons cornstarch
- 1/2 cup light corn syrup
- 1/4 cup unsalted butter
- 3/4 cup water
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- Food coloring and flavor extracts (optional)

Directions:

1. In a large saucepan, combine sugar and cornstarch, mixing well to avoid lumps.
2. Add corn syrup, butter, water, and salt to the sugar mixture. Stir over medium heat until the sugar dissolves completely.
3. Attach a candy thermometer to the saucepan, and bring the mixture to a boil without stirring. Continue boiling until the temperature reaches 250°F (hard ball stage).
4. Remove from heat and stir in vanilla extract and any desired food coloring or flavor extracts.
5. Pour the mixture onto a greased, heat-resistant surface or marble slab. Allow it to cool until it’s warm but firm enough to handle.
6. Grease your hands with butter and start pulling the taffy by stretching and folding it repeatedly until it becomes light in color and chewy in texture, about 10-15 minutes.
7. Pull the taffy into long ropes and cut into small pieces with buttered scissors. Wrap each piece in wax paper to prevent sticking.
