OCTOBER RELISH
4 cup ground onions
1 med. head cabbage (4 cups ground)
10 green tomatoes (4 cups ground)
12 green peppers
6 sweet red or green peppers
1/2 cup salt
1 Tbsp. celery seed
2 Tbsp. mustard seed
1 1/2 tsp. turmeric
4 cups cider vinegar
1 cup water
6 cups sugar
Grind or chop onion, cabbage, tomatoes and peppers coarsely. Sprinkle with 1/2 cup salt and let stand overnight. Next day rinse and drain. Combine remaining ingredients and pour over vegetable mixture. Heat to boiling and simmer for 3 minutes. Seal in hot sterilized jars. Makes 9 pints. *please use standard contempary canning practices.
