Sheet Pan Low Country Bake
~~Ingredients~~
1 lb. Large or Jumbo Shrimp, peeled and deveined (use good shrimp)
4 Links Andouille Sausage, sliced
2 lbs Red Potatoes, quartered
6 pieces Frozen Corn on the Cobb, halved or fresh corn
1 teaspoon salt
1 teaspoon paprika
1 teaspoon black pepper
2-3 tablespoons Old Bay Seasoning
2 tablespoons Chopped Parsley
2 Lemons cut into wedges
4 tablespoons melted butter
4 tsp Olive Oil divided
**if you like it spicy you can add some Cajun seasonings
~~Instructions~~
Preheat oven to 375 degrees. Line a baking sheet with aluminum foil.
Arrange potatoes on a sheet pan, season with salt and pepper, and toss with 2 teaspoons of the olive oil, cover with foil and cook for 15 minutes.
While the potatoes are cooking, to a large bowl add the sliced sausage, shrimp, corn, melted butter, 2 tsp of olive oil, paprika, parsley and 2 tbsp Old Bay Seasoning and toss until fully coated with seasoning.
Once potatoes are par-cooked, remove from oven, uncover, flip and add shrimp, corn and sausage mixture making sure everything is in a single layer. Turn your oven up to 400 degrees.
Bake for 20-25 minutes or until potatoes are fully cooked.
Serve with lemon wedge and additional melted butter.
