Apple Butter Cheesecake

Ingredients:

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup apple butter
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

Directions:

1. Preheat oven to 325°F (163°C).
2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
3. In a large bowl, beat cream cheese and sugar together until smooth and creamy.
4. Add eggs one at a time, beating well after each addition.
5. Mix in vanilla extract and sour cream until combined.
6. In a separate bowl, combine apple butter, cinnamon, and nutmeg.
7. Pour half of the cream cheese mixture over the crust in the pan.
8. Spoon half of the apple butter mixture over the cream cheese layer, then swirl gently with a knife to create a marbled effect.
9. Repeat with the remaining cream cheese mixture and apple butter, swirling again.
10. Bake for 55-60 minutes, or until the center is almost set but still slightly jiggly.
11. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
12. Remove from oven and cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
