🛒 Ingredients
2 chicken breasts, cut into strips 🍗
1 tbsp olive oil 🫒
1/2 tsp paprika
Salt & black pepper 🧂
200 g penne pasta 🍝
150 g broccoli florets 🥦
1 red bell pepper, diced 🌶️
1 tbsp butter 🧈
2 garlic cloves, minced 🧄
150 ml heavy cream 🥛
50 g grated Parmesan 🧀
1 tsp Italian herbs (oregano, basil) 🌿
👨🍳 Instructions
Cook pasta & broccoli: Cook penne in salted boiling water according to package instructions. Add broccoli florets in the last 3 minutes of cooking. Drain, reserving 1/4 cup pasta water.
Cook chicken: Heat olive oil in a large pan over medium-high heat. Season chicken with paprika, salt, and pepper, then sauté 5–6 minutes until golden and cooked through. Remove and set aside.
Sauté vegetables: In the same pan, melt butter. Add garlic and red pepper, cook 3–4 minutes until softened.
Make the sauce: Stir in cream, Parmesan, and Italian herbs. Let simmer 2–3 minutes until slightly thickened. Add a splash of pasta water if needed.
Combine everything: Add chicken, pasta, and broccoli to the sauce. Toss well to coat.
Serve hot: Plate and garnish with extra Parmesan and black pepper.
