Pumpkin Spice No Bake Cookies
Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 1/4 cup whole milk
- 1/4 cup pure pumpkin puree (not pumpkin pie filling)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- A pinch of fine sea salt
- 3 cups old-fashioned rolled oats
Directions:
1. In a medium saucepan, combine the butter, granulated sugar, light brown sugar, and whole milk. Bring the mixture to a rolling boil over medium heat, stirring frequently. Let it boil for 1 minute.
2. Remove the saucepan from heat and immediately stir in the pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt until fully combined.
3. Add the rolled oats and stir until the oats are completely coated with the pumpkin mixture.
4. Drop spoonfuls of the cookie mixture onto a parchment-lined baking sheet. Flatten slightly with the back of the spoon if desired.
5. Allow the cookies to cool and set at room temperature for at least 30 minutes before serving.
