For the Chicken:
2 chicken breasts (about 300g) 🍗
1 tbsp olive oil 🫒
1 tsp paprika

For the Potatoes:
400g baby potatoes, halved 🥔
1 tbsp olive oil
1/2 tsp dried thyme
Salt & pepper
For the Creamy Mustard Sauce:
1 tbsp butter 🧈
1 shallot, finely chopped 🧅
150ml chicken stock
120ml heavy cream 🥛
1 tbsp Dijon mustard
1 tsp wholegrain mustard
Salt & pepper
Garnish:
Fresh parsley, chopped 🌿
👨🍳 Instructions:
Roast the Potatoes: Preheat oven to 200°C (fan 180°C / 392°F). Toss halved potatoes with oil, thyme, salt, and pepper. Roast for 30–35 minutes until golden and crisp.
Cook the Chicken: Season chicken breasts with paprika, salt, and pepper. Grill or pan-sear 5–6 minutes per side until cooked through. Rest, then slice.
Make the Sauce: In a skillet, melt butter and sauté shallot for 2 minutes. Add chicken stock and simmer for 3 minutes. Stir in cream and both mustards. Cook 5 minutes until thickened, season to taste.
Assemble: Arrange chicken and potatoes on a serving plate, spoon over mustard sauce, and sprinkle with parsley.
🔄 Notes & Variations:
Add a splash of white wine to the sauce for more depth.
Replace chicken with pork tenderloin or salmon.
Swap Dijon for honey mustard if you prefer it milder.
