🍰 Italian Polenta Cake
A rustic cake made with polenta, olive oil, and citrus flavors, often topped with powdered sugar or fruit.
Ingredients:
• Cornmeal (polenta): 1 cup (150 g)
• Flour: 1 cup (120 g)
• Sugar: ¾ cup (150 g)
• Eggs: 3
• Olive oil: ½ cup (120 ml)
• Orange zest: 1 tbsp
Instructions:
1️⃣ • Preheat oven to 350°F (175°C).
2️⃣ • Beat eggs with sugar until fluffy.
3️⃣ • Add olive oil and orange zest.
4️⃣ • Mix in flour and cornmeal.
5️⃣ • Pour into greased cake pan.
6️⃣ • Bake 35–40 minutes until golden.
