Ingredients:

2 large onions

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/4 tsp salt

1/4 tsp pepper

2 large eggs, beaten

1 1/2 cups breadcrumbs

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Vegetable oil (for frying)

Instructions:

Prepare the onions: Peel the onions and slice them into 1/2-inch thick rings. Carefully separate the rings, setting aside the larger ones for stuffing.

Stuff the onion rings: In a small bowl, mix together the shredded mozzarella and Parmesan cheese. Take the larger onion rings and stuff them with the cheese mixture, pressing down gently to secure the cheese inside.

Prepare the breading station: In one shallow bowl, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. In a second shallow bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Coat the onion rings: Dip each stuffed onion ring into the flour mixture, ensuring it’s fully coated. Then dip it into the beaten eggs, followed by the breadcrumbs, pressing down to ensure the coating sticks well.

Fry the onion rings: Heat about 2 inches of vegetable oil in a deep skillet or frying pan over medium-high heat. Once the oil is hot (around 350°F/175°C), carefully place the coated onion rings into the oil in batches, frying for 2-3 minutes per side or until golden brown and crispy.

Drain and serve: Use a slotted spoon to remove the onion rings from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce.
